My First Soufflé!

Another 30 By 30 goal is complete! I (mostly) successfully made a soufflé! A Chocolate Soufflé to be exact, using this recipe. The photo above was about 3-5 minutes after they came out of the oven and they had just started to fall.

Chocolate Soufflé

A month or few ago, I told one of my friends (who happens to be a pastry chef in NYC) that I was gunning for making a soufflé but was really nervous because of everything I had heard about them. She told me not to worry and that they are pretty easy to make.

She was right! On New Year’s Eve I was set on making a fancyish dinner. I made Lamb Chops, Rosemary Roasted Potatoes with White Asparagus, and finished the meal off with the fabulousness pictured above.

It took maybe 20 minutes at the most to put everything together, chilled them while I made dinner, and had them in the oven while we ate dinner.

They tasted sort of like a chocolate chip cookie. And, I think it was easier than making chocolate chip cookies, too! This certainly won’t be the last time that I make a soufflé, and I have plenty of recipes piled up to choose from the next time I get a craving!
